Today, Even More Groundhog!

I had never had groundhog until 2 years ago. An older neighbor of my mountain house in western NC mentioned she had seen a few groundhogs this year and she hadn't had any in over 20 years. I got one with a head shot with my 22LR, cleaned it, and carried it to her. I got groundhog stew the next day. It was OK. She told me she had processed the rest and frozen the it. She added that she would fix a dish when I came up every two weeks. After the third dish I had lost my taste for either her cooking or groundhog I am not sure. Thankfully she finished it over the winter when I only make a few day appearances in the winter.

If I get a deer when I am hunting up there I give her a backstrap and either a front shoulder or ham. Whichever I have two of that is not messed up. In the summer and fall she always sharing the excess of her garden that she has not canned. She is a retired literature professor from Western Carolina University and she is self sufficient with her garden but gets little protein. I think she is in her late 70's or early 80's. I share smoked pork, fresh trout, or seared beef with her every chance I get.
